Fair From Home: Make Pineapple Soft Serve

As summer heats up, we’re always looking for new ways to cool down. What better way to do so than with a tangy, refreshing summer soft serve? This dairy-free soft serve captures all the flavors and feelings of summer in one smooth swirl. The whole family is sure to love this sweet treat, and the recipe is easy enough that even younger kids can help out. We hope that making this fun fair dessert creates splendid summer memories that last a lifetime. (Soft) serves up!

Ingredients

Serving size: 2

  • 4 oz. pineapple juice
  • 1 frozen banana
  • ½ cup unsweetened coconut milk
  • 2 cups frozen pineapple chunks
  • 2 Tbsp. sugar
  • 1 tsp. lime juice

Instructions:

Step one: Combine all ingredients in a high-powered blender. Blend for about two to three minutes, or until smooth.

Step two: Transfer to a bowl. Cover and freeze for at least 30 minutes.

Step three: If you want to achieve the classic swirled look, transfer the frozen concoction to a piping bag with a large star tip. Swirl the soft serve into containers and enjoy! Or, you can scoop and serve immediately after freezing.
