Make fruit sushi with this recipe from Baby Boy Bakery and Little Passports

Hi Friends! My name is Jacqui and this is my daughter Mila. I run a recipe + lifestyle website called Baby Boy Bakery where my passion lies with all things food and family. I keep it simple, fun, and kid-friendly. I’m thrilled to be here with Little Passports to share some unique recipes inspired by the places we travel to each month with our Summer Camp In A Box: World Edition.

This month Mila and I have traveled to Japan! Mila can now spot the country on our world map and we’ve learned a lot about some of Japan’s iconic foods, including sushi! While Mila isn’t too into fish, she found it all interesting and it inspired me to create a Fruit Sushi she could enjoy! We rolled up fresh strawberries with sweet coconut rice and wrapped it all together with fruit roll-ups. Our own spin on sushi and we devoured it!

Fruit Sushi

Cook Time: 30 Minutes
Makes About 6 Rolls

Ingredients:

  • 1 ½ cups rice
  • 14 oz. coconut milk
  • 1 tsp. sugar
  • 1 ¼ cups water
  • fresh strawberries OR mangos, sliced thin
  • 8 fruit roll-ups

Directions:

Step One: Start by cooking the coconut rice. In a sauce pan over medium heat bring the rice, sugar, coconut milk, and water to a boil. Then reduce to a simmer, cover and let cook for 20 minutes or until the rice has fully absorbed all the liquid and has become fluffy. Once the rice is done, let it cook completely before working with it.

Step Two: Thinly slice the fruit. We used strawberries here but you could also use mango! Be sure to slice the fruit thin so it rolls easier.

Step Three: On a sushi mat lay out two fruit roll ups.

Step Four: Spoon on about 4 tablespoons of rice and evenly spread it out with the back of the spoon.

Step Five: Add the fruit down the center of the rice.

Step Six: GENTLY begin to roll up the fruit sushi. Use the sushi mat for help. It might take a try or two to get the hang of it.

Step Seven: Use a knife to slice and enjoy!
