Grilled Corn Salad Recipe for Father’s Day!

It’s almost time to celebrate Dad! Show how much you love him this Father’s Day by whipping up a tasty summer inspired grilled corn salad recipe. Follow our step by step below!

Grilled Corn Salad for Father’s Day

Ingredients:

6 ears fresh corn, husked with silks removed
2 tablespoons canola oil
Salt and pepper to taste
3 cups halved cherry tomatoes
1/4 cup diced red onion
1/4 cup basil, finely chopped
1 red bell pepper, finely chopped
5 scallions, finely chopped
2 cups packed arugula

Lemon Dressing

1/2 lemon, juiced
4 tablespoons olive oil
2 tablespoon cider vinegar
Salt and freshly ground black pepper

Directions

Step 1: Start by preheating your grill or broiler to medium heat.
Step 2: Rub corn with 2 tablespoons of canola oil and season with salt and pepper to taste.
Step 3: Grill or broil corn for 7 minutes or until ears are slightly browned.
Step 4: Remove from grill and allow to cool.
Step 5: Remove the kernels from the cob and place in a large mixing bowl with the cherry tomatoes, red pepper, scallions, onions, basil and arugula.
Step 6: In a small bowl, prepare dressing by whisking together lemon juice, olive oil, cider vinear, salt and pepper.
Step 7: Toss the salad with the dressing and serve at room temperature.
